Pumpkin Muffins with Cream Cheese Frosting

Pumpkin Muffins
combine dry ingredients:
2 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/8 tsp. ground cloves

combine, and then add to dry ingredients:
1 beaten egg
3/4 cup milk
3/4 cup pumpkin
2/3 cup packed brown sugar
1/3 cup melted butter

~spoon batter into paper lined muffin cups
~fill until almost full
~bake at 375 degrees for 20-25 minutes
~cool for 5 minutes

Cream Cheese Frosting

Beat with electric mixer:
1 stick (8 Tbs.) softened butter
1/4 cup (2 ounces) softened cream cheese
1 1/2 cups powdered sugar
1/2 tsp. vanilla
1/8 tsp. salt

Yay! I'm going to make some tomorrow. I'm impressed - not too much sugar or too much butter. They were so delicious when we visited you.
