Pumpkin Pecan Waffles with Cinnamon Whipped Cream

I wanted something extra fun and Yummy for Halloween breakfast, (and for Bake at 350's Flavor of the Month) so I thought "why not tweek my waffle recipe and turn them into pumpkin waffles?" So I did, and here is the recipe:

Pumpkin Pecan Waffles with Cinnamon Whipped Cream
makes about 12 waffles
3 cups Flour
2 Tbsp. Baking Powder
1/4 cup Powdered Milk (optional)
1/2 tsp. Salt
1 tsp. Cinnamon
1/4 tsp. Nutmeg
1/8 tsp. Ground Cloves
1/4 cup white sugar
1/4 cup brown sugar
combine all dry ingredients,
then mix in...
1 1/2 cups cold water (or milk if you're not using powdered milk)
1 cup pumpkin
1 cup canola oil
4 large eggs
stir, and then pour batter onto preheated waffle iron,
sprinkle batter with chopped pecans and cinnamon and cook until golden brown.
The Pecans have that wonderful toasted nut aroma and flavor.
Serve with butter, maple syrup and cinnamon whipped cream!
Make cinnamon whipped cream by adding a little cinnamon and sugar to your heavy cream when whipping it. Top with more chopped pecans, and enjoy!!!

I have never thought about sprinkling anything on waffles before baking them! How smart!

Wow! Those look awesome. I haven't made waffles in a long time. I think the waffle maker will be making an appearance soon.
